<p>1 Country ham (12-15 lb) scrubbed, soaked 1 to 2 days, changing water after 4 hours, then daily<br />

<h3>Country Ham Preparation</h3>
<p>Preheat oven to 450F. Place ham in a large pan, fat-side up.</p>
<p>Add sliced ginger and peppercorns, then add enough cider and water to come 2-to-3 inches up the side of the ham. Save remaining cider-water to add to pan as liquid evaporates.</p>
<p>Cover and place in oven. Cook about 20 minutes per pound or until internal temperature registers 160F. Remove from oven halfway through cooking and turn ham over.</p>
<p>Replace and continue cooking. Remove ham to broiler rack and let sit 10 minutes to cool. Remove skin and fat.</p>
<p>Taste, and if it&#8217;s very salty, it may safely be immersed in more apple cider and water to draw out more salt. Taste again and proceed.</p>
<p>You may refrigerate until ready to glaze. Increase oven temperature to 400F.</p>
<p>Mix the applesauce, mustard, horseradish, and 1/2 cup of the brown sugar. Spread over ham.</p>
<p>Bake 20 minutes or until ham is heated through and sauce is bubbly. Remove from oven and turn on broiler.</p>
<p>Mix together remaining 1/2 cup brown sugar and bread crumbs and spread on ham. Broil 5 minutes or until crisp.</p>

<h3><strong>Deviled Ham Preparation</strong></h3>
<p>1. Grind the ham and fat fairly fine, either in a food processor or, in two batches, in an electric blender.</p>
<p>2. if using a processor, add the remaining ingredients at once and process until the mixture is rather like a coarse pate. If using a blender, scrape the first batch of ground ham into a bowl, add the seasonings, process the rest of the ham, and combine with the mixture in the bowl. If too coarse, process again in two batches.</p>
<p>3. Taste for seasoning, then pack into a jar, cover, and refrigerate overnight or longer to let the falvors mingle.</p>
<p>The spread will keep for up to 2 weeks. Makes about 1 1/2 cups.</p>

<h3>Ham Steaks with Whiskey Sauce Preparation</h3>
<p>Brush steaks with melted butter. Snip fat to prevent curling, and grill for 7-8 minutes each side.</p>
<p>To make sauce, gently fry onions in remainder of butter until cooked. Remove from heat and stir in flour gradually. Add stock. Return to heat.</p>
<p>Add sugar and bring to the boil. Simmer gently for about 2 minutes to cook flour.</p>
<p>If sauce seems a little thick, add more water. Add whiskey and season to taste. Place ham steaks on a warmed serving platter and pour on sauce.</p>
<p>Serve with peas and carrots, or sauteed potatoes.</p>

<h3>Ingredients for Ham-Broccoli Rolls Recipe</h3>
<p>4 sl (rectangular) boiled ham (1/4-inch thick)<br />
4 sl Swiss cheese (1/8-inch thick)<br />
10 oz Frozen broccoli spears, cooked and drained<br />
1 tb Butter or margarine<br />
1 tb All-purpose flour<br />
1/4 ts Salt<br />
1 tb Preapred horseradish<br />
2 ts Prepared mustard<br />
1/2 ts Worcestershire sauce<br />
1/2 ts Instant minced onion<br />
2 Slightly beaten egg yolks<br />
1 c Pineapple juice<br />
1/2 c Milk<br />
4 sl Canned pineapple drained</p>
<h3>Ham-Broccoli Rolls Preparation</h3>
<p>1. In a shallow, heat-resistant, non-metallic baking dish, place ham slices. Top each ham slice with cheese.</p>
<p>2. Place cooked broccoli spears on top of each cheese-topped-ham slice. Set aside.</p>
<p>3. In a medium-sized, heat-resistant, non-metallic bowl, melt the one tablespoon butter, uncovered, in Microwave Oven 30 seconds.</p>
<p>4. Blend in the flour, salt, horseradish, mustard, Worcestershire sauce and onion. Set aside.</p>
<p>5. Combine beaten egg yolk and pineapple juice.</p>
<p>6. Add pineapple juice mixture to butter mixture. Blend well.</p>
<p>7. Stir in milk.</p>
<p>8. Heat, uncovered, in Microwave Oven 5 minutes, stirring every minute until sauce is thick and bubbling.</p>
<p>9. Spoon about 1 tablespoon of sauce over broccoli.</p>
<p>10. Roll ham and cheese around broccoli and secure with wooden toothpicks.</p>
<p>11. Heat, covered, in Microwave Oven for 8 minutes.</p>
<p>12. Spoon remaining sauce over ham rolls. Top with pineapple slices.</p>
<p>13. Heat, uncovered, in Microwave Oven 2 to 3 minutes or until sauce is bubbly.</p>

<h3>Ham and Cheese Chowder Preparation</h3>
<p>In large pan, cook potatoes and onion in boiling water until onions are tender. Drain liquid except for 1 cup which remains in the pan with the potato mixture.</p>
<p>In small pan, melt butter. Stir in flour, salt and pepper.</p>
<p>Add flour mixture to potatoes and onions.</p>
<p>Cook and stir until mixture thickens and bubbles. (Watch carefully to avoid mixture sticking to pan.)</p>
<p>Add milk, ham, cheese and cream-style corn.</p>
<p>Stir over medium heat until cheese melts.</p>

<h3>Ham Steak with Pineapple Sauce Preparation</h3>
<p>Trim fat from ham. Lightly score ham slice in a diamond pattern using a sharp knife. Place in an 11- x 7- x 2-inch baking dish.</p>
<p>Combine next 4 ingredients in a bowl, stirring well with a wire whisk; spread mixture over ham.</p>
<p>Cover with heavy-duty plastic wrap, and vent.</p>
<p>Microwave at HIGH 4 minutes or until thoroughly heated. Remove ham slice from dish, and cut into 4 equal pieces; set aside, and keep warm.</p>
<p>Combine pineapple juice and cornstarch in a 1-cup glass measure, and stir well.</p>
<p>Microwave at HIGH 1-1/2 minutes or until thickened and bubbly; stir well.</p>
<p>Yield: 4 servings (serving size: 3 ounces ham and 2 tablespoons sauce).</p>
<p>Per serving: 92 Calories; 4g Fat (37% calories from fat); 6g Protein; 8g Carbohydrate; 20mg Cholesterol; 478mg Sodium</p>

1 lb Ground pork<br />

<h3>Ham- Pineapple Loaf Preparation</h3>
<p>Mix well ground ham, ground pork, Y2 cup reserved pineapple syrup, bread crumbs, eggs, onion and parsley.</p>
<p>Press into a 9 x 5 loaf dish. Top with the pineapple chunks.</p>
<p>Press the chunks lightly into the loaf.</p>
<p>Mix brown sugar, lemon juice, mustard and 1 tablespoon reserved pineapple syrup. Brush over the loaf.</p>
<p>Microwave at medium high (70%) 18 to 20 minutes, brushing once or twice with glaze. Let stand 5 minutes.</p>
<p>Makes 6 servings.</p>

<p>8 Manicotti shells<br />
1/2 c Chopped onion<br />
1 tb Vegetable oil<br />
3 c Ground fully cooked ham<br />

<h3>Ham-Stuffed Manicotti Preparation</h3>
<p>Cook manicotti according to pack directions; set aside. In a large skillet, saute onion in oil until tender. Remove from the heat.</p>
<p>Add ham, mushrooms, half the Swiss cheese &amp; parmesan; set aside.</p>
<p>In a saucepan, saute green pepper in butter until tender. Stir in flour until thoroughly combined.</p>
<p>Add milk; cook, stirring constantly, until thickened &amp; bubbly.</p>
<p>Mix a quarter of the sauce into ham mixture. Stuff shells with about 1/3 cup of filling each. Place in a greased 11×7 baking dish.</p>
<p>Top with remaining sauce; sprinkle with paprika.</p>
<p>Cover and begin <a title="Cooking And Baking" href="http://www.alleasyfoodrecipes.com/cooking_and_baking.php" target="_blank">cooking and baking</a> at 350F for 30 minutes or until heated through. Sprinkle with parsley and remaining Swiss cheese before serving.</p>
