<h3>Golden Onion Quiche Preparation</h3>
<p>Preheat the oven to 375F. Dice 3 T butter and refrigerate.</p>
<p>In a large saute pan, cook the onions in the remaining butter and oil, starting over medium heat and gradually reducing to low heat, for about 1 hour, until the onions are very tender, golden, and reduced considerably in size.</p>
<p>Stir continuously for the last 15 min and be very careful not to let them burn. They will be extraordinarily sweet and delectable. Discard any burned parts.</p>
<p>Sprinkle the onions w/the flour, using a strainer or sifter, and saute another 2 or 3 minutes.</p>
<p>Beat the eggs and cream in a bowl with a third of the cheese. Stir in the onions, and then pour the mixture into the quiche shell.</p>
<p>Sprinkle with remaining cheese and dot with the diced butter.</p>
<p>Bake 25-30 minutes or until browned and set.</p>

<h3>Country Ham Preparation</h3>
<p>Preheat oven to 450F. Place ham in a large pan, fat-side up.</p>
<p>Add sliced ginger and peppercorns, then add enough cider and water to come 2-to-3 inches up the side of the ham. Save remaining cider-water to add to pan as liquid evaporates.</p>
<p>Cover and place in oven. Cook about 20 minutes per pound or until internal temperature registers 160F. Remove from oven halfway through cooking and turn ham over.</p>
<p>Replace and continue cooking. Remove ham to broiler rack and let sit 10 minutes to cool. Remove skin and fat.</p>
<p>Taste, and if it&#8217;s very salty, it may safely be immersed in more apple cider and water to draw out more salt. Taste again and proceed.</p>
<p>You may refrigerate until ready to glaze. Increase oven temperature to 400F.</p>
<p>Mix the applesauce, mustard, horseradish, and 1/2 cup of the brown sugar. Spread over ham.</p>
<p>Bake 20 minutes or until ham is heated through and sauce is bubbly. Remove from oven and turn on broiler.</p>
<p>Mix together remaining 1/2 cup brown sugar and bread crumbs and spread on ham. Broil 5 minutes or until crisp.</p>

1/4 ts Ground cumin<br />
4 lb Well-aged beef sirloin; cut 1-1/2 to 2 inches thick</p>
<h3><strong>Double-Hot Chile Steaks Preparation</strong></h3>
<p>In blender or food processor, combine ground chile, tomatoes, chiles, onion, garlic, salt, oregano and cumin. Process until pureed. If made ahead, refrigerate.</p>
<p>To prepare steak, let both steak and sauce come to room temperature. Place steak in shallow dish, coat generously on both sides with sauce and let stand 2 hours at room temperature, spooning more sauce over steak occasionally.</p>
<p>Preheat broiler or prepare bed of hot coals. Adjust oven rack so meat will be 4-6 inches below heat or grill 4-6 inches above coals. Lightly grease rack or grill.</p>
<p>Broil/grill steak (with sauce that clings to it) to <a title="How To Cook Steaks" href="http://www.alleasyfoodrecipes.com/how_to_cook_steaks.php">desired doneness</a>, turning once; allow 10-15 minutes per side for medium-rare.</p>
<p>Serve with additional sauce, warmed over low heat.</p>

<p>Brush steaks with melted butter. Snip fat to prevent curling, and grill for 7-8 minutes each side.</p>
<p>To make sauce, gently fry onions in remainder of butter until cooked. Remove from heat and stir in flour gradually. Add stock. Return to heat.</p>
<p>Add sugar and bring to the boil. Simmer gently for about 2 minutes to cook flour.</p>
<p>If sauce seems a little thick, add more water. Add whiskey and season to taste. Place ham steaks on a warmed serving platter and pour on sauce.</p>
<p>Serve with peas and carrots, or sauteed potatoes.</p>

<p>Melt margarine in saucepan and brown patties on both sides. Remove patties and keep grease in saucepan.</p>
<p>Add the onion, celery, green pepper, and mushrooms. Cook over low heat for 5 minutes stirring occasionally.</p>
<p>Stir in salt, peppper, sugar and tomatoes. Bring to a boil, then reduce heat and return patties to the saucepan.</p>
<p>Cook for another 15 minutes.</p>
<p>Serve over prepared macaroni noodles.</p>

<h3>Ingredients for Ham, Corn, and Cheese Souffle Recipe</h3>
<p>Vegetable cooking spray<br />
2 ts Dry breadcrumbs<br />
1-1/2 c Fresh corn kernels, (2 large ears)<br />
1/3 c Thinly sliced green onions<br />
2/3 c Diced Maple-Glazed Ham, (3 ounces)<br />
1/4 c All-purpose flour<br />
3/4 c Skim milk<br />
1/2 c Shredded reduced-fat sharp cheddar cheese, (2 ounces)<br />
1/4 ts Ground red pepper<br />
2 Egg yolks<br />
4 Egg whites<br />
1/2 ts Cream of tartar</p>
<h3>Ham, Corn, and Cheese Souffle Preparation</h3>
<p>Coat a 1-1/2-quart souffle dish with cooking spray; sprinkle with breadcrumbs. Set aside.</p>
<p>Coat a large nonstick skillet with cooking spray; place over medium-high heat until hot.</p>
<p>Add corn and green onions; saute 5 minutes or until tender. Remove from heat, and stir in ham; set aside.</p>
<p>Place the flour in a small saucepan. Gradually add milk, stirring with a wire wisk until blended.</p>
<p>Cook over medium heat 3 minutes or until thickened, stirring constantly. Remove from heat; stir in cheese and pepper.</p>
<p>Beat egg yolks in a medium bowl at high speed of a mixer until thick and pale (about 5 minutes).</p>
<p>Gradually add hot milk mixture to egg yolks, stirring constantly.</p>
<p>Stir in the corn mixture, and set aside. Beat egg whites (at room temperature) and cream of tartar in a large bowl at high speed of a mixer until stiff peaks form.</p>
<p>Gently stir one-fourth of egg white mixture into corn mixture. Gently fold in remaining egg white mixture.</p>
<p>Pour mixture into prepared souffle dish.</p>
<p>Begin <a title="Cooking And Baking" href="http://www.alleasyfoodrecipes.com/cooking_and_baking.php" target="_blank">cooking and baking</a> at 325F for 1 hour or until puffed and golden. Serve immediately.</p>

<h3>Happy Family Stew Preparation</h3>
<p>1. Heat enough oil to cover bottom of large, heavy pan until oil is sizzling.</p>
<p>2. Dry meat well; add enough to pan to brown without crowding. Brown on high heat; turn when brown on one side; brown the second and continue until all sides of meat are completely brown. Remove; set aside.</p>
<p>3. Repeat with rest of meat.</p>
<p>4. Reduce heat; add onions and garlic to pan; cook over low heat until soft.</p>
<p>5. Return meat with its juice to pan; add next six ingredients; bring liquid to a boil. Reduce heat; simmer, partially covered, 2 to 3 hours or until meat is tender.</p>
<p>6. With knife or spoon, break meat up into bite-size pieces. Season with salt and pepper and serve over rice.</p>

<p>1.Peel and core apples, cut into quarters;add the sugar and simmer, without water, slowly until the apples are soft.</p>
<p>2.Wash, peel potatoes, cook until they are done.</p>
<p>3.Add salt, nutmeg, egg yolk and butter and mix to a puree.</p>
<p>4.Cut the sausage into slices and fry on both sides.</p>
<p>5.Grease a souffle pan and add the apples, potato puree and the sausage slices and cover with the peeled and sliced onion.</p>
<p>Heat in 200 C oven for about 20 minutes.</p>

<h3>Indian Pot Roast Preparation</h3>
<p>Use this recipe for either regular meat or venison. Mash garlic and saute in butter.</p>
<p>Salt meat and flour. Brown well on all sides in butter. Lay meat on bed of this sliced onion in lge. Dutch oven.</p>
<p>Add the butter, spices and seasonings. Pour rum or wine over meat.</p>
<p>A good pot roast will supply most of its own juices, but pour the water over to make an ample supply of gravy. Cover tightly and simmer 3-4 hrs, either in oven or on the stove top.</p>
<p>If carrots are wanted, add during last 1/2 hr. of cooking. Add dumplings last 12 minutes.</p>
<p>When roast is done, remove to a hot round platter and surround with dumplings and carrots. Stir gravy until smooth. Pour over roast.</p>
<p>If fresh dill is available, cut it over dish with lavish hand.</p>
