Easy Buffalo Chicken Pizza

Buffalo Chicken Pizza

1 pizza dough recipe
1 ts Olive oil
1/4 c Butter; melted
1/4 c Hot cayenne pepper sauce
2 c Diced cooked chicken; (about 250g)
1/2 c Chopped celery
1 c Crumbled blue cheese

Easy Buffalo Chicken Pizza Preparation

Preheat the oven to 250C.

Using your fingertips or the heel of your hand, spread the dough to cover the bottom of a 12 inch pizza pan that has been sprinkled with a little semolina to stop it from sticking.

Push the dough up to the edge of the pan, forming a rim. If the dough is too sticky, dust it and your hands lightly with flour. With a fork, prick the dough 15 to 20 times. Brush with the oil.

In a medium-sized bowl, combine the butter and hot pepper sauce; mix well. Add the chicken and celery and toss to coat well. Spread evenly over the prepared base, then sprinkle with the blue cheese.

Bake for 7-10 minutes, or until the pizza crust is crisp and brown. Cut and serve.

NOTE: Make sure you use hot cayenne pepper sauce and not hot pepper sauce – yes, there is a difference!

I decided that I will share my absolute favourite pizza recipe to celebrate this occasion, so here it is :)

Gourmet Greek Lamb Pizza Ingredients

Gourmet Greek Lamb Pizza

200g dough ball, rolled and ready

2 ½ tablespoons Napoli sauce

90g mozzarella cheese, grated

10g dried mixed herbs

35g feta cheese, diced

20g kalamata olives, pitted and sliced

2 garlic cloves, crushed

100g lamb backstrap, marinated in basil pesto

2 tablespoons Greek yoghurt or Tzatziki

Gourmet Greek Lamb Pizza Method

  1. Preheat a pizza stone in your oven to 250C for 30 minutes, or use a really hot wood-fired oven.
  2. Spread Napoli sauce over the pizza base.
  3. Cover with cheese, then sprinkle mixed herbs and crushed garlic over the top (add a little olive oil to the garlic to make it easier to distribute if you like).
  4. Sprinkle the olives and crumble the feta cheese over the pizza.
  5. Cook in the oven at 250C for 7 to 10 minutes.
  6. While your pizza is in the oven, seal both sides of your lamb backstrap on a hot frypan, then place in the oven for about 3 to 5 minutes (ideally the meat should be medium-rare, but it’s up to you how much you like it cooked).
  7. When your lamb is cooked to your liking, take out of the oven and allow to rest for 2 minutes.
  8. Slice the lamb thinly, and place over the top of the cooked pizza.
  9. Cut the pizza into slices, and drizzle the yoghurt or tzatziki over the top.

Easy Tomato, Mushroom And Spinach Pizza Recipe

I don’t often eat a lot of vegetarian meals, but lately I’ve been more conscious of cutting back on my meat portions.  In doing so, I’ve found that it’s not always that easy to achieve.  I found this great recipe that is not only a tasty vegetarian option, it also has tons of nutritional benefits, with mushrooms to make up for the protein you would normally get from meat.

Spinach is also one of the best vegetables you can eat to get your daily dietary requirements of many vitamins and minerals (so Popeye was right all along!).  Enjoy…

Tomato, Mushroom And Spinach Pizza

150g Spinach
1 medium Plum Tomato
80g Mushrooms
1 tb Olive Oil
1 Pizza Base dough recipe
100g Mozzarella Cheese; Shredded (Caboolture cheese is best)
20g Caramelised Onions
1/2 ts Dried Oregano
1/2 ts Black Pepper

Fresh Tomato, Spinach and Mushroom Pizza Preparation

Preheat oven to 250C.  Preheat your pizza stone for at least 30 minutes prior to putting your pizza in the oven.

Wash and thinly slice spinach leaves. Cut tomatoes into 1/2cm thick slices; thinly slice mushrooms.

In a frying pan over medium heat, cook mushrooms in olive oil until tender.

Sprinkle the cheese over your pizza base. Top with sliced spinach, tomatoes, and mushrooms. Sprinkle with onions, oregano, and pepper.

Sprinkle a little semolina on your pizza stone (or just use a piece of greaseproof paper) and place pizza on your pizza stone in oven for 7-10 minutes or until crust is golden.

Remove the pizza from the oven when cooked, cut into slices and serve.

Easy Garlic Chicken Pizza Recipe

Ingredients for Garlic Chicken Pizza Recipe

4 oz Light cream cheese; softened
1/4 c Non-fat sour cream
2 Cloves garlic; mashed
1 c Boned and skinned chicken breast halves; cooked and diced
1/2 Red onion; cut in rings
1/2 Tomato; chopped
1/2 c Mushrooms; sliced
1 c Mozzarella cheese; shredded
1 Pizza base

Garlic Chicken Pizza Preparation

Preheat your oven to 250C.

Mix together cream cheese, sour cream and mashed garlic until smooth. Spread on pizza base, top with chicken, onion, tomato and mushrooms and cheese.

Bake in a 250C oven for 10 minutes or until crust is done and cheese is melted. Top with parmesan cheese.

Making A Wood-Fired Pizza

Recently I made a cooking video teaching you an easy way to make pizza dough at home for yourself, now I show you how to finish the pizza off and cook it in the oven, again with the help of my friend Belinda.

There are some issues with the audio on this video, as it was recorded in the kitchen with a loud exhaust fan going, so I must apologise for that, but I hope you enjoy this pizza video we made for you anyway!
