Easy Basil Pesto Recipe
I love a good pesto, and this recipe is really simple and easy to make. Pesto is so versatile, plus it lasts for quite a while, so you can make up a decent batch to keep in the fridge and use in pastas, sandwiches, roasts (I love to marinade lamb backstrap in it), salads, all sorts of meals!

Easy Basil Pesto Recipe
Ingredients:-
80g Basil leaves
50g Pine nuts
2 garlic cloves
4 tablespoons grated parmesan
150ml extra virgin olive oil
MAKES 200ML
Put the garlic, basil, pine nuts and parmesan in a mortar and pestle or a food processor and pound or mix to a paste. Add the oil in a steady stream, mixing continuously.
Add salt if necessary.
Refrigerate in a sterilised jar, covered with a layer of olive oil, for up to 3 weeks.
